Waffle-iron wheat tortillas? Great idea! With crispy bacon and a spicy avocado cream the Mexican dish is quickly made.

Ingredients

Servings: 4
  • 100 g Emmental (piece)
  • 100 g Cheddar (piece)
  • 160 g Jalapeños (in Rings; Glass)
  • 8 Wheat tortillas (wraps)
  • 7-10 Tbsp Oil
  • 8 Disc/s Bacon
  • 1 Avocado
  • 1 Garlic clove
  • 2 TABLESPOONS Lime juice
  • 1 TABLESPOON Schmand
  • 7-10 Tbsp salt, pepper
  • 1 red onion
  • 5 Stem/s Parsley

Directions

    Grate and mix both cheeses. Spread 1-2 tablespoons of jalapeño rings on each half of a tortilla. Sprinkle cheese over it. Put each tortilla together

    Heat a double waffle iron (approx. 15 x 18 cm waffle surface) and brush well with oil. Put 1 filled tortilla in each. Place 1 slice of bacon on top. Close the waffle iron and bake the tortilla for about 4 minutes until golden brown. Keep warm in a hot oven (electric cooker: 80 °C/circulating air: 60 °C/gas: see manufacturer) until all tortillas are baked.

    In the meantime, cut the avocado in half, remove the core, peel the flesh and mash it with a fork. Peel garlic and chop finely. Mix with lime juice and sour cream into the avocado. Season with salt and pepper.

    Peel and finely dice the onion. Wash parsley, shake dry and chop the leaves coarsely. Arrange tortilla wafers with avocado cream, diced onion and parsley.
