Peel 1 piece (approx. 10 g) of ginger and chop finely. Clean and wash 1 red chilli pepper and 1 small spring onion, cut both into fine rings. Mix the prepared ingredients with 1 tbsp sesame, 3 tbsp lime juice, 1 tbsp agave syrup, 3 tbsp soy sauce and 1 tbsp sesame oil. Cut 300 g tofu into bite-sized cubes and mix with the sweet-and-sour sauce.
