Cut the orange in half, cut off a quarter, set aside. Squeeze juice from the remaining orange. Boil up orange juice, sugar and cinnamon in a pot. Add the couscous while stirring, remove the pot from the heat, cover and let it stand for about 5 minutes
Stir the fat into the couscous, steam over a low heat for 2-3 minutes, remove from the heat. Peel the rest of the orange quarters. Cut flesh into small pieces. Stir the sultanas and orange pieces into the couscous and pour into a glass. Add yoghurt and sprinkle with pistachios
