Wash the rosemary, shake dry, remove the needles from the twigs and chop finely. Wash lemon hot, grate dry, finely grate peel. Use the rest of the lemon for other purposes. Peel garlic and cut into thin slices.
Mix oil, wine and prepared ingredients thoroughly, season with pepper. Brush the grilled food with it at least 2 hours before and put it in a cool place. Shortly before grilling, remove the food from the marinade, dab dry and season with salt.
