Chilli, garlic and ginger marinade

Ingredients

  • 1 TABLESPOON Szechuan pepper
  • 3 Garlic cloves
  • 50 g fresh ginger root
  • 1 red chilli pepper
  • 1 small branch Rosemary
  • 4 TABLESPOONS Peanut oil

Directions

    Roast pepper in a pan while turning. Peel and finely chop garlic and ginger. Wash and clean the chilli and cut into thin rings. Wash rosemary, shake dry, remove needles from twig and chop.

    Finely crush pepper in a mortar. Mix oil and prepared ingredients and rub the grilled food with it. Marinate in cold water for at least 4 hours. Salt before grilling.
