Wax bean salad

Ingredients

Servings: 4
  • 750 g Wax beans
  • 7-10 Tbsp Salt
  • 3 red onions
  • 1 green pepper
  • 2 TABLESPOONS Sugar
  • 5-6 Tbsp White wine vinegar
  • 4 TABLESPOONS Oil
  • 7-10 Tbsp Pepper
  • 3 discs Bacon
  • 3 discs Toast

Directions

    Clean, wash and cut the beans into pieces. Put the beans in boiling salted water and cook for 12-15 minutes. Peel onions and cut into strips. Clean, wash and chop the peppers. Melt the sugar in a pan until golden brown.

    Deglaze with 5 tablespoons of vinegar and 3 tablespoons of oil while stirring. Drain the beans on a sieve. Put onions, peppers and beans in a bowl. Pour the marinade over it and let it soak well. Season again with salt, pepper and vinegar. Drain the bacon in a pan, remove and break into pieces. Cut bread into cubes. Heat 1 tablespoon of oil in the bacon fat. Fry the bread cubes in it until golden brown.
