Briefly blanch the almonds in boiling water. Cold rinse and press out of the skin. Place on a baking tray and let dry in a preheated oven (electric cooker: 50 °C/circulating air: 50 °C/gas: level 1) for about 1 hour. In between, switch the oven off and on again from time to time. Let almonds cool down
Grind the almonds very finely in a mixer or almond mill. Mix with sugar and bitter almond flavour. Lightly beat the egg white. Add the almond paste bit by bit until a firm dough is formed
Dust the baking tray with flour. Place small heaps on top. If necessary, press in with your thumb. Dust with icing sugar. Dry in a preheated oven (electric cooker: 100 °C / circulating air: 75 °C / gas: level 1) for approx. 1 1/4 hours. Dust again with icing sugar
