Ingredients

  • 1 kg Cherry tomatoes (date or honey tomatoes)
  • 1 Vanilla pod
  • 7-10 Tbsp Sea salt, ground ginger
  • baking paper

Directions

    Preheat oven (electric cooker: 150 °C/hot or circulating air: 130 °C/gas: not suitable). Line two baking trays with baking paper. Wash the tomatoes and let them drip off on kitchen paper. In the meantime, cut the vanilla pod lengthwise and scrape out the pulp. Mix with approx. 1 tbsp salt and 1 tsp ginger.

    Halve the tomatoes and mix with the seasoning salt. Distribute the tomatoes on the trays with the cut surfaces facing upwards.

    Dry in a hot oven for about 1 hour. Turn down the temperature (electric cooker: 120 °C/hot or circulating air: 100 °C/gas: not suitable) and allow to dry for a further 5 hours. Let the tomatoes cool down on the tray. Shelf life approx. 2 weeks when stored in a cool, airtight place. Alternatively, place the dried tomatoes in lift-off jars and cover with good olive oil. This way they will keep refrigerated for up to 1 month.
