Clean the chilli, cut lengthwise, remove seeds, wash and chop very finely. Cut 3 olives into rings, put aside. Dice the rest of the olives. Peel onion and chop very finely.
Wash the meat, dab dry, dice, then chop finely. Mix with chilli and ketchup. Season with salt and pepper. Arrange tartar with onion, olive cubes, rings and egg yolk.
