Asian beef tartare

Ingredients

  • 1 TABLESPOON Sesame
  • 20 g pickled sushi ginger
  • 1 red chilli pepper
  • 1 collar Chives
  • 3 Spring onions
  • 400 g fresh beef (e.g. rump steak or fillet)
  • 1 TABLESPOON Chilli sauce for chicken (sweet chilli sauce)
  • 4-5 Tbsp Soy sauce
  • 1 TABLESPOON Olie (bijv. sesamolie)
  • 7-10 Tbsp salt, pepper

Directions

    Roast sesame seeds in a pan without fat until golden brown, remove.

    Chop the ginger finely. Clean the chilli, cut lengthwise, remove seeds, wash and also chop finely. Wash the chives, shake dry and cut into small rolls. Clean and wash spring onions.

    Finely chop 2 spring onions. Dab meat dry. Cut into very fine cubes with a good sharp kitchen knife.

    Mix the prepared ingredients, chilli sauce, soy sauce and oil well. Season to taste with salt and pepper. Serve the tartar. Cut the remaining spring onion into fine rings and sprinkle on top.
