Clean and wash the spring onions. Cut 1 spring onion very finely, the rest diagonally into very fine slices. Cut the chilli lengthwise, remove seeds, wash and chop finely together with the ginger.
Wash the chives, shake dry and cut into small rolls.
Mix the tartar with the prepared ingredients, chilli sauce, oil, sesame oil, sherry and soy sauce in a bowl. Season with salt and pepper.
Approx. 1⁄4 Place the tartar in a serving ring or cookie cutter, sprinkle 1 teaspoon of sesame seeds on top and press down gently. Remove the ring carefully. Prepare 3 more tartar tarts from the remaining tartar and sesame seeds in the same way.
Served with soy or chili sauce.
