Peel and finely chop 1 walnut-sized piece of ginger. Roast 2 tablespoons of sesame seeds in a pan without fat. Wash and clean 2 small red chillies and cut into fine rings. Clean and wash 2 spring onions and cut them into fine rings.
Mix 200 g plum puree, ginger, 2 tablespoons sake (Japanese plum wine) and approx. 5 tablespoons light soy sauce. Stir in sesame and onions. Arrange in small bowls.
