For 4 glasses (approx. 250 ml each), peel and finely grate 1 piece (approx. 20 g) of ginger. Boil 400 ml almond milk, 200 ml beetroot juice and ginger. Froth 150 ml almond milk (best in an electric milk frother). One after the other, first frothed milk and then slowly pour beetroot milk into the glasses. If you don't want pieces of ginger in the drink, pour the beetroot milk through a fine sieve first. Sweeten if necessary.
