Ingredients

  • 1-2 Garlic cloves
  • 120 g Spring onions
  • 150 g cherry tomatoes
  • 150 g Courgette
  • 1/2 (approx. 125 g) yellow pepper
  • 1 package (450 g, 6 slices) frozen puff pastry
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp freshly ground white pepper
  • 150 g Double cream cream cheese with herbs
  • 1 egg (size M)
  • 1-2 TABLESPOONS Breadcrumbs
  • 1 Egg yolk (size M)
  • 1 TABLESPOON Whipped cream
  • 2 TABLESPOONS Sunflower seeds
  • baking paper

Directions

    Peel and finely chop the garlic. Clean and wash spring onions, tomatoes, zucchini and peppers. Cut spring onions into rings, zucchini into slices and peppers into cubes. Halve the tomatoes. Put the puff pastry slices next to each other and let them thaw at room temperature for about 20 minutes.

    Meanwhile heat oil in a pan and fry spring onions, garlic, courgette, bell peppers and cherry tomatoes in it at medium heat for 4-5 minutes while turning. Season with salt and pepper. Remove from the pan and allow to cool slightly. Mix cream cheese and egg. Halve the puff pastry slices. Sprinkle some breadcrumbs in the middle of each puff pastry sheet. Spread the cream cheese on top and add the vegetables. Fold up the corners and press them together slightly. Place the spicy Copenhagen on two baking trays lined with baking paper and bake in the preheated oven (electric cooker: 200 °C/ gas: level 3) one after the other for about 20 minutes.

    Sprinkle some breadcrumbs in the middle of each puff pastry sheet. Spread the cream cheese on top and add the vegetables. Fold up the corners and press them together slightly. Place the spicy Copenhagen on two baking trays lined with baking paper and bake in the preheated oven (electric cooker: 200 °C/ gas: level 3) one after the other for about 20 minutes. In the meantime, whisk the egg yolks and cream and 5 minutes before the end of the baking time, spread the Copenhageners with it and sprinkle with sunflower seeds. Serve in a basket
