Ingredients

  • 1 pack of (450 g) deep-frozen puff pastry
  • 5 red onions
  • 200 g Bacon cubes
  • 150 g Fresh cream
  • 2 Egg yolk (size M)
  • 1 collar Thyme
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 3 Goat cheese thaler (Picandou; approx. 180 g)
  • 1 TABLESPOON Milk
  • 7-10 Tbsp Flour

Directions

    Place the puff pastry slices next to each other and let them thaw at room temperature for about 20 minutes. In the meantime peel onions and cut them into fine rings. Leave the bacon out a little in a pan without fat.

    Mix bacon fat, créme fraîche and 1 egg yolk. Wash thyme, dab dry and pluck leaves from the stalks, except some for garnishing. Stir the thyme into the crème fraîche mixture. Season with salt and pepper.

    Crumbled goat cheese. Place puff pastry slices on top of each other and roll out into a rectangle (30 x 60 cm) on a floured work surface and cut into 8 squares (15 x 15 cm). Fold the corners towards the middle and press on.

    Place on 2 baking trays lined with baking paper. Spread the crème fraîche mixture over the middle of the dough pieces. Cover with bacon, onions and goat cheese. Mix 1 egg yolk and milk and brush the dough with it.

    Bake the trays one after the other in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 15-20 minutes. Serve the Copenhageners garnished with remaining thyme.
