Ingredients

  • 1 pack of (450 g; 6 slices) deep-frozen puff pastry
  • 500 g Leeks (leek)
  • 4 discs Pineapple (canned)
  • 3 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 250 g cooked ham
  • 100 g medieval Gouda cheese
  • 1 Egg Yolk
  • 2 TABLESPOONS Milk
  • 7-10 Tbsp Flour

Directions

    Let the puff pastry slices thaw on a floured work surface. In the meantime, clean and wash the leek and cut into thin rings. Cut pineapple into small pieces. Heat oil in a pan. Steam the leek for 8 minutes. Season with salt and pepper.

    Fold in pineapple and let it cool down. Coarsely grate the cheese. Place 3 slices of puff pastry on top of each other and roll out into a circle (approx. 30 cm Ø). Place the pastry sheet in a casserole dish (approx. 26 cm Ø), leaving the rim slightly protruding. Prick the base several times with a fork. Place 2 more puff pastry slices on top of each other and roll out to a circle (30 cm Ø). Fill half of the leek into the baking dish. Spread the ham on top. Spread the cheese over it and add the remaining leek. Place the rolled out puff pastry sheet on top and press the edges together. Roll out the rest of the pastry to a plate (26 cm Ø).

    Place 2 more puff pastry slices on top of each other and roll out to a circle (30 cm Ø). Fill half of the leek into the baking dish. Spread the ham on top. Spread the cheese over it and add the remaining leek. Place the rolled out puff pastry sheet on top and press the edges together. Roll out the rest of the pastry to a plate (26 cm Ø). Use the dough wheeler to roll out thin strips and cover the surface of the dough with them. Stir egg yolk and milk until smooth and coat the puff pastry with it. Bake the puff pastry in a preheated oven (electric: 200 °C/ gas: level 3) for 25 minutes on the bottom of the oven. Then slide the rack onto the first rack and finish baking in another 20-25 minutes. Serve puff pastry hot

    Use the dough wheeler to roll out thin strips and cover the surface of the dough with them. Stir egg yolk and milk until smooth and coat the puff pastry with it. Bake the puff pastry in a preheated oven (electric: 200 °C/ gas: level 3) for 25 minutes on the bottom of the oven. Then slide the rack onto the first rack and finish baking in another 20-25 minutes. Serve puff pastry hot
