Wash the escalopes, pat dry and cut into fine strips. Fry in 1 tbsp. hot oil while turning for approx. 3 minutes. Season with salt and pepper
Peel and finely chop the onion. Wash the herbs, shake dry and chop finely. Mix vinegar, mustard, salt, pepper and sugar, add 3 tablespoons of oil. Stir in herbs and onion
Clean and wash all vegetables. Cut tomatoes into quarters, the rest into thin rings or slices. Clean, wash and shake dry lettuce leaves and pluck smaller if necessary. Mix everything with the vinaigrette and serve with the escalope strips
If you don't want meat, you can cut the salad
also serve with diced or grated cheese
