Roast ham with cinnamon crust

Ingredients

  • 1 Onion
  • 1 Carrot
  • 1 Bay leaf
  • 1 TEASPOON Peppercorns
  • 1.5 kg cured roast ham (with rind, boneless; possibly to be ordered in advance)
  • 1 TABLESPOON Orange or apricot marmalade
  • 2-3 TABLESPOONS demerara sugar
  • 1-2 TABLESPOONS Orange juice
  • 1 TEASPOON Cinnamon
  • 1-2 Star Anise
  • 7-10 Tbsp plain orange

Directions

    Peel and halve the onion. Peel, wash and chop the carrot. Boil both with 2-3 l water, bay leaf, peppercorns and meat in a large pot. Then simmer covered for about 1 3/4 hours

    Mix jam, sugar, orange juice and cinnamon. Remove the roast and let it cool down a little. Remove the rind. Put the roast on the fat pan or in a roasting pan. Spread with half orange and spice mixture. Pour on 1/8 l stock, spread star anise around it

    Roast in the preheated oven (electric cooker: 200 °C/circulating air: 175 °C/gas: level 3) for 20-30 minutes. After approx. 10 minutes coat with the remaining spice mixture

    Remove the roast from the oven and cut into slices. Arrange on a plate with orange slices. Tastes hot or cold
