Refreshing apple ice cream

Ingredients

Servings: 4
  • 4 large apples (about 600 g)
  • 7-10 Tbsp Juice of 1 lemon
  • 1 Vanilla pod
  • 4 Eggs (size M)
  • 50 g Sugar
  • 6 Kiwis
  • 1 package Vanillin sugar
  • 7-10 Tbsp Lemon balm

Directions

    Wash apples under cold running water, dab dry with kitchen paper, cut in half and, except for one half, peel and roughly dice. Drizzle lemon juice on one half of the apple as well as on the cubes. Puree the apple cubes with the cutting stick of the hand mixer. Slice the vanilla pod lengthwise and scrape out the pulp. Separate the eggs. Beat the egg yolks, sugar and vanilla pulp with the whisk of the hand mixer in a hot water bath until creamy. Fold in apple puree.

    Beat the egg white until stiff and fold into the apple mixture. Freeze in the freezer for 3-4 hours. For the sauce, peel kiwis, dice roughly, mix with vanilla sugar and puree. Form the ice cream into 8 balls with an ice cream scoop and fill into 4 glasses. Pour kiwi sauce over it. Cut the apple halves into slices and decorate the ice cream with 2 slices and the lemon balm
