Vanilla parfait with berry stone

Ingredients

Servings: 6
  • 2 Egg Yolk
  • 1 Egg
  • 50 g Sugar
  • 7-10 Tbsp pulp of 1 vanilla pod
  • 200 g Whipped cream
  • 1 package (300 g) frozen berry cocktail
  • 1/4 l Red wine
  • 1 heaped Tsp cornstarch

Directions

    Put the egg yolk, egg, 40 g sugar and vanilla pulp in a bowl. Beat in a hot water bath with a whisk until a thick cream is formed. Stir cold in a cold water bath.

    Whip the cream until stiff and fold into the egg yolk mixture. Slant the box form (1 litre capacity) and half fill one corner with the parfait mixture. Let it freeze for 30 minutes. Put 100 g frozen berries on the frozen parfait and spread the rest of the parfait over it.

    Allow to freeze for about 4 hours. For the sauce, heat up red wine to 3 tablespoons. Stir cornflour with the remaining red wine until smooth, add to the boiling red wine. Add berries. Let simmer for about 2 minutes while stirring.

    Season with sugar and let it cool down. Dip the knife into hot water and remove the parfait from the mould, cut into slices and arrange on plates with the sauce.
