Pea mint puree on toasted bread

Ingredients

Servings: 4
  • 1 Onion
  • 6 TABLESPOONS Olive oil
  • 300 g frozen peas
  • 2 stem(s) Peppermint
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 discs brown bread
  • 150 g Sweet peas
  • 125 g Buffalo Mozzarella Cheese

Directions

    Peel and chop the onion. Heat 1 tablespoon of oil in a saucepan. Fry the onion for about 10 minutes. After about 3 minutes add peas and 4 tbsp. water. Wash the mint, shake dry, pluck the leaves from the stalks and chop, except for a little bit for garnishing.

    Season peas with salt, pepper and mint. Puree finely with a hand blender. In the meantime heat 4 tablespoons of oil in a frying pan and fry the slices of bread for about 4 minutes while turning. Season with salt

    Wash and clean the sugar snap peas and cut them into strips. Take out bread and heat 1 tablespoon of oil in the pan. Fry the sugar snap peas for about 2 minutes while turning. Season with salt and pepper

    Cut the cheese into thin slices. Arrange slices of bread, mashed potatoes, mozzarella and mangetouts. Garnish with mint leaves
