Peel and finely chop the onion. Wash the mint, dab dry, pluck the leaves from the stalks and cut into strips. Slice pepperoni lengthwise, remove seeds, wash and cut into fine rings.
Mix everything and add orange and lemon juice, vinegar and 2-3 tablespoons of oil. Season to taste with salt, pepper and sugar. Wash lamb chops, dab dry, brush with remaining olive oil and season with salt and pepper.
Place on a grill and grill for about 5 minutes on each side. Wash the tomatoes, rub dry, carve them crosswise or cut them in half. Sprinkle with parmesan and parsley and season with salt and pepper.
If necessary, place on aluminium foil and grill for about 5 minutes. Arrange lamb chops, grilled tomatoes and mint salsa on plates. Serve garnished with mint as desired.
