Defrost the peas. Cut ham into small cubes. Drain mandarins, collect juice. Cut cheese into cubes. Clean, wash, cut or pluck frisée into bite-sized pieces.
Mix the prepared ingredients and arrange in portions in bowls. For the sauce, peel and chop the onion. Wash the chives and cut into small rolls. Mix onion, chives, ketchup, mayonnaise and 100 ml mandarin juice.
Season to taste with salt, pepper and brandy. Spread over the salad and serve.
