Spring salad with fresh goat cheese

This salad lives up to its name: with green asparagus and radishes, some cream cheese and a tangy dressing, we bring spring onto our plates.

Ingredients

Servings: 4
  • 75 g Lamb's lettuce
  • 1/2 (approx. 100 g) Lettuce
  • 1/2 bunch Radishes
  • 500 g green asparagus
  • 5 TABLESPOONS Rapeseed oil
  • 1 TABLESPOON Sugar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 3 TABLESPOONS White wine vinegar
  • 1 TABLESPOON coarse mustard
  • 200 g Fresh goat cheese
  • 12 thin slices of thin smoked ham (approx. 15 g each)

    Wash, clean and shake the salad dry. Wash and clean the radishes and slice them into thin slices. Wash the asparagus and cut off the woody ends. Heat 2 tablespoons of oil in a frying pan. Fry the asparagus for about 4 minutes, sprinkle with sugar, caramelise and season with salt and pepper.

    Mix vinegar and mustard, season to taste with sugar, salt and pepper. Fold in 3 tablespoons of oil. Arrange salad, asparagus and radishes on plates. Crumble goat's cheese over it and add ham. Drizzle with vinaigrette.
