Cut the melon into slices. Cut the flesh from the skin, then cut into strips. Remove any seeds. Clean and wash the radishes and cut them into thin slices. Wash mint, shake dry and cut into strips.
Squeeze the lime. Mix with salt, pepper and 1/2 tsp. brown sugar, fold in oil. Mix with radish, melon and mint. Leave to stand for about 10 minutes.
Make a melon salad. First cut the cheese into slices, then crumble over it. Serve with fried chicken filet.
