Preheat oven (electric cooker: 200 °C/circulating air: 175 °C/gas: see manufacturer). Cut red beetroot into slices. Wash and clean spring onions and cut into fine rings. Wash herbs and shake dry.
Pluck off leaves or needles and chop finely. Peel garlic, chop finely and mix with oil.
Spread the beetroot and spring onions in an ovenproof dish. Sprinkle with herbs. Crumble the feta and sprinkle with garlic oil. Bake in a hot oven for about 15 minutes. Served with: wholemeal baguette.
