Salad with shrimps and oranges

Ingredients

  • 2 stem(s) Lemongrass
  • 2 small cloves of garlic
  • 1 chili pepper
  • 2 TABLESPOONS Sugar
  • 8 TABLESPOONS Fish sauce
  • 6 TABLESPOONS Lime juice
  • 4 small Roman salad hearts
  • 2 red onions
  • 300 g cherry tomatoes
  • 2 Oranges
  • 12 raw shrimps (about 20 g each; without head, in shell)
  • 7-10 Tbsp Salt

Directions

    Remove the outer woody leaves from the lemon grass and chop the white inside finely. Peel and finely chop the garlic. Wash the chillies, cut them in half lengthwise and remove the seeds. Chop the pod finely. Mix sugar, fish sauce, 2 tablespoons water and lime juice. Add lemongrass, chilli and garlic and mix well

    Clean, wash and pluck the salad into bite-sized pieces. Onions peel, halve and cut into strips. Wash and quarter the tomatoes. Peel oranges so that the white skin is completely removed. Remove the fillets with a sharp knife between the parting skins

    Peel the shrimps, except for the tail fin, and remove the intestines. Wash the shrimps and pat them dry. Poach prawns in boiling salted water for 2-3 minutes. Remove and rinse with cold water

    Mix salad, onions and orange filets. Arrange salad with shrimps and dressing on plates. Roasted white bread tastes good with it
