Wash the tomatoes, dab dry and quarter them. Cut avocado in half, remove stone. Cut the skin of the avocado halves and carefully peel off the flesh. Dice the flesh. Wash coriander, shake dry, dab off leaves and chop
Wash the meat, dab dry and cut into strips. Heat 1/2 tbsp. oil in a coated frying pan. Fry the meat for 5-6 minutes while turning, season with salt and pepper and remove from the heat.
Halve the lemon, squeeze one half. Season lemon juice with salt and pepper, fold in 2 1/2 tbsp. oil. Mix meat, tomatoes, avocado, vinaigrette and 3/4 of the coriander, season again, arrange, sprinkle with coriander and serve with lemon wedges
