Italian chicken salad on toasted bread

Ingredients

Servings: 4
  • 2 small chicken fillets
  • 1 TEASPOON clarified butter
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 100 g cherry tomatoes
  • 30 g black olives without stone
  • 1 collar Rocket
  • 1 Garlic clove
  • 4 discs Rye mixed bread (grey bread)
  • 6 TABLESPOONS low-fat yoghurt
  • 7-10 Tbsp some pink pepper berries

Directions

    Wash the meat, dab dry and cut into small cubes. Heat clarified butter in a coated pan. Fry the diced meat for 4-5 minutes, season with salt and pepper and remove from heat.

    Wash the tomatoes, dab dry and quarter them. Cut olives into slices. Clean, wash and drain the rocket.

    Peel the garlic and cut in half. Toast the bread in the toaster in portions. Rub the slices of bread with the cut side of one garlic half. Chop all the garlic and put it in a bowl with the meat, olives, tomatoes and yoghurt.

    Finely chop the rocket, fold in and season with salt and pepper. Arrange the salad on the bread, sprinkle with pink berries and serve.
