Peel and wash the carrot. Wash and clean the cucumber. Cut carrot and cucumber into fine cubes. Clean and wash spring onion and cut into fine rings. Wash chives, shake dry and cut into small rolls, except for some garnish.
For the vinaigrette, whisk vinegar, salt, pepper, mustard and honey. Add oil drop by drop to the vinaigrette. Stir the prepared ingredients into the vinaigrette. Clean and wash the salad and cut into wide strips.
Arrange Bündner meat and salad on a plate and garnish with chives.
