Peel, quarter and cut the pineapple into pieces. Wash the mint. Boil 1.5 litres of water and sugar in a pot. Add pineapple, cranberries, fennel and mint and simmer for about 10 minutes, let cool down. Pour water into bottles and chill. Shelf life approx. 5 days. Tastes best chilled
