Clean, wash and cut the cabbage into quarters. Cut cabbage into fine strips from the stalk. Mix with vinegar and good 1⁄2 tsp. salt and knead vigorously with your hands.
Peel and wash the carrots and cut them into fine sticks or grate them roughly. Peel onion and dice very finely.
Stir mayonnaise and cream or milk until smooth. Mix with cabbage, carrots and onion. Season to taste with salt, pepper and sugar.
