Roast pine nuts briefly in a pan without fat. Squeeze lime. Mix juice, honey, salt and pepper. Fold in the oil.
Wash the arugula and shake dry. Peel and slice the mango. Halve the avocado, remove the core, remove the flesh from the skin with a tablespoon and cut into slices.
Cut the mozzarella into slices. Layer on plates with mango and avocado. Sprinkle with pine nuts and rocket. Sprinkle with the vinaigrette.
