Citrus fruit salad with advocaat mascarpone

Ingredients

  • 2 red or pink grapefruits
  • 2 Oranges
  • 3 Clementines
  • 1 (approx. 150 g) Carambola
  • 1 big apple
  • 1 Banana
  • 2 Limes
  • 4 TABLESPOONS Honey
  • 1/2 Vanilla pod
  • 250 g Mascarpone (Italian double cream cheese)
  • 150 g Skimmed milk yoghurt
  • 2 TABLESPOONS Sugar
  • 1/8 l Egg liqueur
  • 20 g crushed pistachio kernels
  • 7-10 Tbsp Lemon balm

Directions

    Peel grapefruits, oranges and clementines so that the white skin is completely removed. Cut the fruit into slices. Wash the carambola and apple. Cut the carambola into slices. Quarter apple, remove seeds and cut into slices.

    Peel banana and cut into slices. Line a peel with orange and grapefruit slices. Put the remaining fruit in the middle. Squeeze limes, mix with honey and pour over the salad. Allow to soak through. Meanwhile cut the vanilla pod lengthwise and scrape the pulp into a bowl. Add mascarpone, yoghurt, sugar and advocaat (up to 1 tablespoon) and mix. Pour into a bowl. Spiral the remaining advocaat into the cream.
