Bring vinegar and honey to the boil and simmer for about 10 minutes until syrupy. Let it cool down.
Wash the basil and shake dry, plucking the leaves. Cut the mozzarella into 6 slices each. Wash tomatoes and cut into 4 slices.
Alternately layer tomatoes, basil and mozzarella in an ovenproof dish. Drizzle with olive oil and vinegar syrup. Season with salt and pepper.
