Austrian potato salad

Ingredients

  • 1.2 kg small new potatoes
  • 4 TABLESPOONS Pumpkin seeds
  • 100 g Bacon
  • 1 collar Radishes
  • 6 TABLESPOONS Cider vinegar
  • 2 TABLESPOONS liquid honey
  • 1 TABLESPOON medium hot mustard
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 6 TABLESPOONS Rapeseed oil
  • 1 TABLESPOON Pumpkin seed oil

Directions

    Wash and scrub the potatoes thoroughly. Cook in boiling water for about 20 minutes. Roast pumpkin seeds in a pan without fat, remove. Cut bacon into strips except for 2 slices. Leave the bacon strips and slices in the pan until crispy. Drain on kitchen paper. Clean, wash and slice the radishes.

    Mix vinegar, honey and mustard, season with salt and pepper. Fold in rapeseed oil. Drain the potatoes and, depending on their size, possibly halve them. Mix potatoes, radishes, pumpkin seeds, bacon pieces and vinaigrette. Allow to soak a little and arrange on a plate. Sprinkle with pumpkin seed oil and garnish with bacon slices
