Apple soup with snow dumplings

Ingredients

  • 2 medium-sized apples
  • 700 ml cloudy apple juice
  • 2 TABLESPOONS Sugar
  • 50 g Raisins
  • 7-10 Tbsp thinly peeled skin of
  • 1/2 untreated lemon
  • 25 g Cornstarch
  • 1 Protein (size M)
  • 1/2 TEASPOON Lemon juice
  • 7-10 Tbsp ground cinnamon
  • 7-10 Tbsp Lemon balm

Directions

    Wash the apples, quarter them, cut out the core and cut the apple quarters into slices. Boil up the apple juice, apple slices, 1 tablespoon of sugar, raisins and lemon peel. Stir cornflour in a little water until smooth.

    Stir into the boiling soup and bring to the boil again briefly. Beat the egg white until stiff. Stir in remaining sugar and lemon juice. Place small dumplings with 2 teaspoons on the hot (no longer boiling!) soup, cover and allow to simmer for 4-5 minutes.

    Arrange soup in deep plates. Sprinkle snow dumplings with cinnamon. Serve garnished with lemon balm.
