Wash the apricots thoroughly. Cut each apricot in half and remove the stone. Put 2 almonds in the hollow. Fold the apricots together again and wrap each with 1 slice of bacon. Wash the thyme, dab dry and pluck the leaves from the stalks.
Heat olive oil in a large pan and fry the apricots in it over medium heat for about 4 minutes, turning them over. Add thyme 1 minute before the end of the frying time. Serve the apricots garnished with mint and thyme in a bowl. Served with baguette
