Ice stars with caramelized fruits

Ingredients

Servings: 4
  • 1 can(s) (580 ml; drained weight 255 g) pitted lychees
  • 1 (approx. 475 g) Mango
  • 2 TABLESPOONS demerara sugar
  • 4 cl Plum wine
  • 2 TABLESPOONS freshly squeezed orange juice
  • 1 package (1 liter) Vanilla Ice Cream
  • 7-10 Tbsp Cinnamon
  • 7-10 Tbsp Lemon balm

Directions

    Drain Lychees on a sieve. Peel the mango, cut the flesh off the stone and cut into pieces. Melt the sugar in a pan. Deglaze with plum wine, orange juice and 2 tablespoons of water.

    Add fruit and let it caramelize. Cut ice cream into 2 cm wide strips and cut out stars with cookie cutters. Arrange the ice cream with the fruits on four plates. Dust the ice stars with cinnamon and decorate with lemon balm as desired
