Ingredients

  • 250 g Flour
  • 30 g ground almonds without skin
  • 300 g Icing sugar
  • 120 g Butter
  • 1 egg (size M)
  • 1-2 TABLESPOONS cold milk
  • 150 g Marzipan raw mass
  • 80 g dried cranberries
  • 2 TEASPOONS grated peel of 1 untreated orange
  • 1 very fresh protein (size M)
  • 2 TABLESPOONS Lemon juice
  • 7-10 Tbsp red and blue food colouring
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Cling film
  • baking paper
  • 2 small freezer bags

Directions

    Put the flour and almonds in a bowl. Sift 100 g icing sugar on top. Separate the egg. Add egg yolk, butterin chunks and milk. First knead with the dough hooks of the hand mixer, then with cool hands quickly to a smooth dough. Wrap in foil and chill for at least 1 hour.

    For the filling, divide the marzipan into small pieces. Crush with cranberries and orange peel in the universal chopper. Add egg white and 4 tablespoons of cold water and work into a paste. Roll out half of the dough on a floured work surface to a thickness of 3 mm. Cut out stars (6 cm Ø) and place them on 2 baking trays covered with baking paper. Brush the stars with the paste. Cut out the same number of stars from the remaining dough and place them on the coated stars. Bake the trays one after the other in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 15-20 minutes. Remove the stars with the baking paper from the trays and let them cool down on cake racks. For the icing sieve 200 g icing sugar into a high mixing bowl. Add egg white and lemon juice and beat with the whisk of the hand mixer until a thick icing is formed.

    Brush the stars with the paste. Cut out the same number of stars from the remaining dough and place them on the coated stars. Bake the trays one after the other in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 15-20 minutes. Remove the stars with the baking paper from the trays and let them cool down on cake racks. For the icing sieve 200 g icing sugar into a high mixing bowl. Add egg white and lemon juice and beat with the whisk of the hand mixer until a thick icing is formed. Remove about 3 tablespoons of the icing. Half of it light blue, the other half pink. Fill both halves into a small freezer bag, cut off a small corner from each bag. First brush the stars with the white icing, then spray on pink or light blue stripes. Let the icing dry
