For the crumbles, place flour, 75 g sugar, 1 packet of vanillin sugar, salt, ground almonds and butter in flakes in a mixing bowl and knead with the dough hooks of the hand mixer. Then work into crumbles with your hands. Put the crumbles in a cool place. Wash, peel and quarter the apples, cut out the core. Cut apples into slices. Sprinkle with lemon juice. Put apples in a greased, ovenproof flat dish.
Sprinkle with remaining sugar. Spread crumbles evenly on top and sprinkle with flaked almonds. Bake in the preheated oven (electric oven: 200 °C/ gas: level 3) for 35-40 minutes. In the meantime whip cream and sour cream until creamy with the whisks of the hand mixer. Sprinkle in the remaining vanilla sugar.
