Ingredients

  • 6 TABLESPOONS Milk
  • 500 g Flour
  • 1 cube (42 g) fresh yeast
  • 4 TABLESPOONS Sugar
  • 6 Eggs (size M)
  • 1 pinch Salt
  • 400 g soft butter
  • 1 Egg yolk (size M)
  • 100 g Apricot Jam
  • 4 TABLESPOONS crushed pistachio kernels
  • 7-10 Tbsp Flour
  • baking paper

Directions

    Warm 4 tablespoons of milk lukewarm. Put the flour in a bowl, make a depression in the middle and crumble the yeast into it. Add 2 tablespoons of sugar and lukewarm milk and mix with some flour from the edge to a thick paste. Cover and leave to rise for 15-20 minutes. Add the eggs, 2 tablespoons of sugar and salt to the pre-dough in the bowl and knead with the dough hooks of the hand mixer to a smooth yeast dough. Knead the soft butter into the dough piece by piece.

    Form the dough into a ball and let it rise again for about 1 hour, covered. Roll the dough again on the floured work surface. Form into a roll and cut into 16 pieces of the same size. Form the dough pieces into rolls of about 30 cm each. Make a loop with 2/3 of the roll and press the end firmly. Pull the free third through the loop. Turn the lower part of the loop from left to right. The free end of the rope is now pulled through the small loop from above and pressed down at the bottom. Put the braids on two baking trays lined with baking paper. Whisk the egg yolk and 2 tablespoons of milk and coat the braids with it. Leave to rise for another 10-15 minutes. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 15-20 minutes one after the other.

    Turn the lower part of the loop from left to right. The free end of the rope is now pulled through the small loop from above and pressed down at the bottom. Put the braids on two baking trays lined with baking paper. Whisk the egg yolk and 2 tablespoons of milk and coat the braids with it. Leave to rise for another 10-15 minutes. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 15-20 minutes one after the other. In the meantime, heat up the jam, pass it through a sieve and coat the plaits with it 5 minutes before the end of the baking time. Sprinkle the finished plaits with pistachios
