White garlic soup (Ajo blanco)

Ingredients

Servings: 9
  • 5 discs Toast
  • 6 Garlic cloves
  • 1 (approx. 500 g) grape blue grapes
  • 200 g peeled almonds
  • 6 TABLESPOONS Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 TABLESPOONS Wine vinegar

Directions

    Soak toast in water. Meanwhile peel garlic. Wash, halve and seed the grapes. Squeeze the toast well. Put toast, almonds, garlic and oil in a mixer and work into a smooth paste.

    Season with salt, pepper and vinegar. Gradually add 1 1/2 litres of cold water. Again mix thoroughly. Then put it in a cool place. Serve with the grapes
