Wash parsley and dab dry leaves, except for some for garnishing, pluck from the stalks and chop finely. Mix spring quark and parsley. Season with pepper. Quarter peppers, remove seeds, wash and pat dry.
Clean and peel the carrots. Wash cucumber hot and grate dry. Quarter the cucumber, cut out the seeds. Cut vegetables into sticks. Arrange vegetables and quark and garnish with remaining parsley.
