Ingredients

Servings: 7
  • 1 Pineapple
  • 4 Kiwis
  • 1 Papaya
  • 1 collar Mint
  • 100 ml Orange liqueur
  • 2 TABLESPOONS demerara sugar
  • 5 TABLESPOONS Lime juice
  • 250 ml Pineapple juice
  • 2 (750 ml each) Bottles of dry sparkling wine

Directions

    Cut the stalk off the pineapple. Peel the pineapple with a knife. Slice the pineapple, remove the hard middle stalk, cut the flesh into small pieces. Peel and chop the kiwis. Peel and halve the papaya and scrape out the seeds. Cut the flesh into small pieces as well. Wash mint, dab dry, cut leaves into fine strips. Mix the fruit with mint and liqueur in a bowl. Chill for 1 hour. Mix sugar with lime juice and pineapple juice, pour into the fruit. Fill up with sparkling wine shortly before serving
