Peel and finely dice the onion and garlic. Heat the oil in a pan. Sauté the onion and garlic. Add tomatoes and 3 stalks of thyme and season with salt, pepper and sugar.
Simmer the sauce for about 5 minutes. From the remaining thyme stalks, except for a little to garnish, pluck off the leaves and chop finely. Before serving, remove the thyme stalks and stir in freshly chopped thyme. Garnish sauce with thyme
