Wash the tomatoes, dab dry and cut into quarters. Wash the cucumber, dab dry, quarter lengthwise, then cut crosswise into thin slices. Drain the olives, cut the flesh into slices from the stone.
Place the ingredients in a salad bowl. Rinse the thyme, dab dry and remove the leaves. Add thyme, salt, pepper and olive oil to the salad, mix the salad and leave to stand for 5 minutes.
Season the salad if necessary. Cut the cheese into slices and place on the salad. Serve with flatbread.
