Pasta salad with artichokes (diet)

Ingredients

  • 2 Mini artichokes (70 g each)
  • 3 TABLESPOONS Lemon juice
  • 7-10 Tbsp Salt
  • 50 g Croissant noodles
  • 1 (30 g) red onion
  • 2 TEASPOONS grainy mustard
  • 7-10 Tbsp freshly ground pepper
  • 2 TEASPOONS White wine vinegar
  • 3 TABLESPOONS Mineral water
  • 1 TEASPOON liquid honey
  • 1 TEASPOON Olive oil
  • 20 g Rocket

Directions

    Rinse the artichokes, break off the stems, rub the broken parts of the artichokes with lemon juice. Put artichokes and 2 tablespoons of lemon juice in boiling salted water, cook for 10-15 minutes.

    Cook the pasta in boiling salted water according to the instructions on the packet. Drain the artichokes and rinse with cold water. Rinse pasta in a sieve with cold water and drain. Peel onion and cut into fine slices.

    For the salad dressing, mix mustard, salt, pepper, vinegar, mineral water, honey and oil. Mix pasta and onion slices in half the sauce, marinate for 5 minutes. Sort the rocket, wash and pat dry.

    Season pasta salad if necessary. Arrange rocket and noodle salad on a plate, quarter artichokes, place on the salad and drizzle with remaining sauce.
