Drain the gherkins and cut into slices. Toast bread in the toaster until golden brown. Spread with remoulade. Roll up the roast beef and place on the toast. Spread cucumbers on top, sprinkle with cheese.
Place the toast on a baking tray lined with baking paper. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 4-6 minutes until the cheese has melted. Wash the chives, dab dry, cut some stalks into small rolls.
Garnish toast with chive rolls and chives.
