Peel the pineapple and cut it into thin slices, possibly cutting out the stalk. Slice the cheese into thin shavings with a peeler. Wash thyme, shake dry, pluck off leaves and chop.
Preheat oven (electric cooker: 220 °C/circulating air: 200 °C/gas: see manufacturer). Cut bread into 8 slices and drizzle with olive oil. Spread ham and pineapple on the slices of bread. Sprinkle with cheese and thyme and bake in a hot oven for 5-8 minutes. Serve still hot.
